Grain-Free Lemon Bars

I have an affinity for inspirational quotes. Several favorites are printed and nailed to my the wall across my desk. Whenever the work gets rough, it’s always helpful to have a reminder of what you are doing it all for.

These 30 quotes don’t need any introduction. Pick a few to write over your desk, to motivate you when you are down. Share these with a friend, or better yet, make them lemon squares. Anyone deserves them for working so hard.

Grain-Free Lemon Bars

Grain-Free Lemon Bars


  • Crust:
    • 1/2 cup almond flour
    • 1/2 cup tapioca flour
    • 3 tbsp honey
    • 2 tbsp melted coconut oil
    • 1 tsp orange zest
  • Filling:
    • 5 eggs
    • 1 full lemon (rind included)
    • 3 tbsp tapioca flour
    • 1/2 cup honey


  1. Preheat the oven to 350 degrees.
  2. Prepare the crust by mixing the ingredients and pressing it onto the bottom of a lined 9×9 pan.
  3. Bake for 10-12 minutes until golden, and allow to cool for 20 minutes.
  4. Prepare the filling by pulsing the lemon in the food processor then adding the honey, lemon, and eggs. Blend until smooth and there are no lemon chunks.
  5. Pour over the crust and bake for about 25 minutes until set. (The middle might still be jiggly but that’s okay; it will firm up when cold.) You don’t want a brown crust over the filling because that will ruin the tart flavor.
  6. Refrigerate for 4 hours or until set, and enjoy!
