Mushroom Bisque

Sarah, where have you been? You haven’t posted in, like, forever.

Um, good question. I’ll answer that in a moment.

If you are new here, welcome. I usually post twice a week, except for when I go AWOL for three weeks. It has only been three, right? Feels like forever… I almost forgot how much I enjoy sitting alone and typing out a one-sided conversation and posting it for anyone to see. Do people actually read this or do you skip to the recipe? (Except you, mom, thanks for reading.)

Okay, back to the subject. Where have I been? Australia. No, that’s not sarcasm. This Canadian traveled to the other side of the world and enjoyed a hot break from the cold Canadian winter. This was not a random vacation. My brother got married there. How a Canadian guy ends up married to an Australian girl beats me. Love works in weird ways and if I knew anything about that, I would be writing about relationship advice instead of yammering about whether or not people read this section at all.

So how was Australia?

In my head, there’s the stereotype of the country being a hick desert town with cacti everywhere, koalas climbing the trees, and kangaroos foraging like squirrels. Of course, I knew that this would not be true.

It’s similar to how people assume Canadians live in igloos in a snowy forest and ride moose to buy coffee at Tim Hortons. They tend to forget that we live in civilized cities. So I expected Perth to be equally modern without the adorable Austrailian wildlife hopping around the neighborhood.

I was wrong.

My family arrived at the resort which was a half-an-hour drive from Perth, a short step for Canadian-kind, but a long way for the Australian-kind. The buildings were surrounded by a huge, lush golf course. We parked the car, stepped outside, and pulled out our cameras.


Kangaroos were everywhere. They hopped around the golf course in packs, eating, frolicking, and relaxing in the sun. So, to all of the Australians who swore that I won’t see these animals outside of zoos, you were wrong. Kangaroos are rampant, you just have to look hard enough. Afterall, the stereotype came from somewhere.

On a totally unrelated note, let’s talk about the recipe.

Bisque is a rich seafood soup that originated in France. Nowadays, it has become a loose term for any kind of creamy vegetable soup, especially with red peppers, squash, tomato, and mushrooms. In short, I can call this recipe ‘Mushroom Soup,’ but I want to sound fancy. And there’s no shame in that. Soup or bisque, this recipe is delicious, creamy, and light.

Mushroom Bisque


  • 2 onions
  • 6 tbsp of grapeseed oil, separate
  • 8 cups sliced white mushrooms or a mix of types
  • 1 tsp salt
  • 1/2 pepper
  • 3 tbsp minced garlic
  • 1 1/2 cup almond milk
  • 3 1/2 cup water


  1. Dice the onions and sautee in a medium-sized pot with three tablespoons of grapeseed oil until golden.
  2. Add the mushrooms to the onions with three more tablespoons of oil.
  3. When the mushrooms are soft, add the salt, pepper, garlic, and water.
  4. Bring to a boil then simmer for 2–3 hours (the longer the better.)
  5. Add the almond milk and puree until smooth. Adjust the seasonings to taste.
  6. If you’re going to freeze the soup, don’t add the almond milk until after you unfreeze it.
